Sweet Potato, Spinach, French Bean and Lentil Dahl

Lentils are a great store cupboard standby as they are good for you, cheap, and very versatile.

lentils need spices to give them extra flavour and Steenbergs have so many to choose from.

I used measuring spoons rather than kitchen-drawer spoons for ingredients

What to do

Put all ingredients, except sweet potato, beans and spinach in a pan. Bring to simmer and cook for 10 minutes. Remove birds eye chillies.

Add sweet potato, beans and cook until tender (another 10 minutes). I added a little more water at this stage to stop it drying out.

Stir in spinach and cook for a minute until wilted. Add salt and pepper to taste.

Serve with naan bread.
