Spicy Spinach Egg Nests

Instructions - works for 2


  1. Heat the oil, cook the onions and garlic until soft.
  2. Stir in the garam masala and turmeric for one minute.
  3. Add the tomatoes - season well and cook for a further two minutes.
  4. Pile the spinach on top, mix well with tomatoes and simmer for five minutes. Scatter the cheese over the mixture.
  5. Crack the eggs on top and cook until the eggs are cooked.
