What to do

  1. In a heavy casserole dish, heat the oil then sauté the garlic until translucent. Add the tomatoes and cook over a medium heat for 10 minutes. Stir in the black pepper, sumach, cumin seeds and salt and simmer for 5 minutes. Serve and eat with couscous, or allow to cool and serve on toast as an appetizer.
