As founder of nikibakes and a general foodie, herbs and spices are at the heart of my dishes, without them my food is simply incomplete.

I never really thought about where I buy my spices from until a few years ago. I used to head over to my local supermarket, pick up what I needed and just throw any spices I could find first into my basket. This all changed a few years ago though when I began to become more aware of organic produce. I quickly realised that this doesn’t just extend to fresh produce and that sauces and spices are just as important.

@steenbergsltd is truly an all rounder when it comes to stocking up on herbs and spices. From garlic salt to exotic saffron, the quality of their spices is second to none. I still remember my first encounter with their curry powder. I enjoyed my curry dish so much that I bit my tongue by accident! My excitement clearly got the better of me but it just goes to show, organic really is best.

Go Fresh with Meera Sodha’s new cookbook

Meera talks candidly about her life growing up as a Gujarati in Lincolnshire, of family recipes and traditions and above all a life filled with delicious fresh vegetables.  Her recipes use herbs and spices to enhance the flavours in a huge variety of vegetables. Using different blends of traditional Indian spices such as black mustard seeds, chilli, cumin, coriander and turmeric in her Rainbow Chard Saag Aloo and Baked Onion Bhajis, and adding in the ‘subtle jabs’ of star anise, lemon and curry leaves in her nostalgic Gujarati Dal.

All of the recipes looked really inviting but the baking ones are always the most appealing, especially now the children are off for the school holidays.  We decided to try the Banana & Cardamom Buns for a weekend brunch and they did not disappoint.

Not overly sweet, but with a lovely subtle hint of cardamom, these were loved by adults and children alike. They were delicious eaten fresh from the oven with a cup of coffee, but also in a more English way halved and buttered like a scone or with, dare I say it…Nutella!

IMG_1027We were a little free with the quantities, having added 2 whole bananas, but some extra flour and a little extra yeast made for a sticky but manageable dough which rose well during the proving stage. You could have ground your own cardamom pods but we used the handy Steenbergs organic ground cardamom.

Our buns definitely didn’t look as round and pretty as the picture in the book but the egg wash gave them a lovely crust and the soft bready texture was delicious.

Definitely one to add to the repertoire!

Another ingenious idea is Peanut, Black Sesame & Ginger Brittle, with the black seeds giving extra theatre and the ginger adding a lovely warm kick. We’re really keen to try out the the Chocolate Fondants with Star Anise too. The star anise is ground in a pestle & mortar and then passed through a fine sieve, creating a delicious fondant that is: “crusty on the outside, warm and gooey on the inside with the distinctive, lingering aroma of anise.”

Here at Steenbergs we are always trying to find new ways to add a bit of extra spice to our dishes and Nadiya definitely uses them with style and experience. Her unusual but delicious dish of Cod & Clementine, one of her Mum’s regular recipes, includes a great combination of spices to liven up the fish, and the clementine peel adds a fresh, zesty finish.

The book is filled with chapters ranging from ‘Lazy Sunday Mornings’ to ‘Midnight Feasts’ and ‘Snacks and Sharing’ to ‘Dessert for Dinner’. Sweet treats vie for attention with aromatic savoury snacks and we mustn’t forget the famous birthday cake that Nadiya created for Her Majesty The Queen; a delight of orange, fondant and roses.

Hemsley & Hemsley’s new cookbook Good + Simple

cover jpegThe lovely Hemsley & Hemsley sisters are back again, with a great new book packed full of ‘Good + Simple’ recipes. Still with the same philosophy for eating food that is ‘delicious, nutritious and sustainable’, they aim to create ‘fast food that is good for you’.

Their dishes are packed full of nutrient laden foods to create a happy, healthy gut and therefore ultimately leading to a healthy body and mind.  There are plenty of vegetables, lots of interesting herbs & spices, but definitely no lack of meat – in fact the sisters advocate ‘boiling the bones’ to make nutritious stock. Natural fats such as coconut oil, olive oil, butter and egg yolk are also encouraged as great ways to add taste and give sustainable energy but they do steer clear of grains, preferring fibre-filled pseudocereals such as quinoa & buckwheat.

From a breakfast of Butternut & Almond Butter Porridge, to lunch of Noodle Pots, soups and salads, these are healthy recipes that also fill you up.

One Pot Wonders from the One Pot Cook – Hattie Ellis’s new cookbook gives us 150 delicious family recipes

Winner of the 2013 Guild of Food writers Book of the Year as well as the 2013 Miriam Polunin Award for the Best Book on Healthy Eating for her book What to Eat?, Hattie has a proven track record for producing thought-provoking books delving into culinary questions that affect our eating today.

The One Pot Cook is no exception, highlighting the ever present question of what to cook for the family each evening.   The idea of cooking with one pot is that many a cosy family meal is created quickly and easily by throwing everything in together and letting the flavours harmonise.

Hattie divides her book into Soups & Stocks, Simple Suppers, Winter Warmers, Summer Spreads, Explore the World and Easy Puds, all of which have maximum flavour but minimum washing up!

Simple Suppers, Hattie says in her book, ‘are what make the kitchen the heart of the home’, and includes some delicious staples such as risottos & gratins but who wouldn’t want to try Cart Driver’s Pasta or Hole-&-some-Toad?

Packed full of flavour, spice lovers will be pleased to see that many of the dishes use a cornucopia of different ingredients.  However whilst the ingredients list may be long, the effort involved is often minimal.  Hattie’s deliciously rich and unctuous Beef Rendang for instance, which when made traditionally should take 8 hours at least, has been reduced to around 3 hours with the help of some handy cooking tips.

How to bake a clean cake with Henrietta Inman’s new cookbook

Clean CakesClean Cakes is the brand new cook book from skilled pastry chef Henrietta Inman.  Based down in Suffolk, she does baking demonstrations, runs cookery courses and sells at farmer’s markets and festivals, as well as running a successful blog www.henscleancakes.co.uk.

Her beautiful new recipe book is filled with delicious patisserie that looks delightful and tastes just as good as it looks….but without the guilt! STEENBERGS SPICE TASTER PANEL

Steenbergs Lemon Chicken Rub & Steenbergs organic Smoky Paella Spice Blend

This time around our spice taster panel was in for a treat, sampling two different, delicious spice blends, created by Axel and hand-blended in the Steenbergs factory near Ripon, North Yorkshire.  Both of them have Mediterranean influences and can be used for specific dishes, but it has been interesting and encouraging to see how diverse and varied the uses have been for these products.

STEENBERGS LEMON CHICKEN RUB

lemon-chicken-rubThis new lemon chicken rub from Steenbergs is one of the few non organic mixes. It has been developed over a number of years to combine all our favourite flavours in a chunky, easy to use rub, packed with flavour.  Although the title suggests a meaty blend, it is, like all other Steenbergs blends, fully vegetarian, just using the term ‘lemon chicken’ for the complementary Mediterranean herbs that make up this flavoursome spice mix.

Ingredients include: black pepper, salt, lemon peel, garlic, fennel seeds, parsley, coriander seed, lemon myrtle, paprika and lemon oil.

Our panel was really pleased with this product, with 77% describing it as ‘fabulous’ or ‘great’.  73% also thought it a very versatile product with possibilities including stirring into hummus, rubbing on fish or meat, sprinkling on roasted vegetables & potatoes, adding to rice or mixing into a salad dressing.

Our tasters were ingenious in their creations: rubbing, stirring, seasoning and savouring as this blend was designed to inspire.  Creations included red lentil dhal, many different chicken dishes including casserole, stew, Kievs and roast; chick peas burgers; roasted vegetables; homemade hummus; rubbed onto whole fish, flavouring savoury rice and in potato salad. One of our panel commented that there are ‘a million and one uses for this product’.

When asked to describe their perfect accompaniment to Lemon Chicken, our panel were definitely thinking healthily with 25% going for green vegetables, 25% for roasted veg (incl. potatoes) and 19% for salad, closely followed by rice (13%).

Do you ‘eat to live’ or ‘live to eat’ though, that is the question.  The majority of our taste testers definitely ‘live to eat’!

As far as the flavour was concerned, many of our team enjoyed the variety of ingredients and intensity of the blend, adding that it is ‘convenient to use for quick meals to add flavour’.  The black pepper was the predominant flavour, with some looking for a bit more lemon, but overall it was seen as a very flavoursome, versatile product.  These are the words that our taster panel used to describe the Lemon Chicken Rub.

STEENBERGS ORGANIC SMOKY PAELLA SPICE MIX

organic-smoky-paella-spice-blend-50g (1)Steenbergs organic Smoky Paella Spice Mix includes the smoky flavour of smoked paprika as well as saffron. The core blend is paprika with a hint of rosemary and loads of luxuriant saffron and garlic. The flavour of the smoked paprika is Axel Steenberg’s way of hinting at the smokiness that you get from making a traditional paella over an open fire.

Steenbergs Smoky Paella Spice seasoning is perfect with a glass of sangria to reminisce about long Spanish, balmy nights. Simply add 1-2 tsp of Steenbergs organic smoky paella spice mix to the stock when cooking paella for 4 people.

The ingredients in the spice mix, which are all organic, include: paprika (pimenton), smoked paprika, onion powder, garlic powder, ground black pepper, rosemary herb, saffron.

Our taster panel really enjoyed this blend with 92% rating it ‘Fabulous’ or ‘Great’, and 92% also saying that they would use it again – many commenting that ‘it means that making paella is so much easier as all the flavours are in one pot’.

Many of our panel used the spice blend to make traditional paella but in different ways: from flavouring the stock to marinating the chicken or prawns, or just adding in at the end.  With 76% having made paella before, lots of people had their own recipe but it is always great to see the wide variety of uses.

Our taste testers definitely demonstrated the versatility of this blend with recipes including all of the following: roasted pepper veggie lasagne sauce; pan-cooked chicken; fideua; infusing oil before adding stock; roasted butternut squash risotto; instead of turmeric; to flavour water in which to cook rice; substituting the sweet smoked paprika in Jamie Oliver’s chicken chorizo paella, as a rub on chicken which was then stir fried with peppers & mushrooms; stuffed peppers with rice & veg; used sprinkled on chicken and grilled; with seafood; shakshuka/pipperade style dish – fried onions, peppers & tinned tomatoes with poached egg on top; used in fajitas/enchiladas and on griddled chicken strips with roasted veg; fish stew and slow cooked pork ribs.  Other interesting ideas included: adding to mashed sweet potato; with spinach and feta; sprinkled on chips and on tomato salad.

We loved one of our taste tester’s descriptions of the spice blend: “a ‘flavour’ of Spain with the smoky paprika oozing through – the intensity of flavours of garlic and paprika knocking on the door.”  When asked to give just one word to sum it up, here’s what everyone came up with…

STEENBERGS TEA TASTER PANEL Morning Brew herbal tea & organic Fairtrade Earl Grey Tea

Our tea taster panel had a delicious choice of teas this time, with a delicate organic Fairtrade Earl Grey and one of our new herbal tea blends, Morning Brew.  We had some great comments on both teas, although 63% of you did prefer the Earl Grey.  Read on to find out more…

Since we sent out the samples to our lovely tea taste panel, we have made a couple of changes to our Morning Brew.  Firstly we have managed to find organic oatstraw so we can make Morning Brew completely organic – hooray!  Secondly, we have relaunched our herbal teas in brand new practical packaging to make it easier to see the delicious blends.  We’d love to know what you think…

What did you think of Morning Brew?

Given the name ‘Morning’ Brew and the blend of uplifting herbs, it was interesting to see that only 29% would drink it just in the morning, with the majority happy to drink it at any time of the day (56%) and 9% in the evening.  Only a tiny minority didn’t like the blend.

The vast majority of our tea tasters enjoy herbal tea on a regular basis (88%), with 77% rating it excellent or good. When asked to describe how it made you feel we were delighted to find that ‘refreshed’, ‘invigorating’ and ‘energised’ were frequent words, as though was ‘relaxed’ – how good to feel both at the same time!

Although very positive about the tea, it wouldn’t be the majority of our panel’s first drink of the day, many of you preferring a caffeinated drink such as coffee or black tea to give you that much-needed kick start.  Maybe it doesn’t go well with toast which it what the majority of our panel have for breakfast.  We particularly liked the sound of ‘toast with a savoury topping – goats cheese & honey or peanut butter & black pepper’ – delicious!

About Steenbergs Earl Grey:

organic-fairtrade-earl-grey-tea-loose-leaf-125g-tiSteenbergs Organic Fairtrade Earl Grey Tea is a deliciously light and fragrant classically scented organic black tea.  It comes from the Greenfield organic Tea Estate which lies between 5000ft and 6000ft above sea level in the Uva Highlands in central Sri Lanka. Sri Lanka is a jewel of a tropical island, located just above the equator with perfect growing conditions for organic Fairtrade tea, the climate is temperate, but rainy. Uva tea is regarded by the Japanese as the best of all Ceylon teas and we tend to agree. It produces a pale liquor with a slightly astringent taste that works very well with the flowery Bergamot flavour.

We use Greenfield organic Fairtrade Orange Pekoe grade tea leaves as its base, which compliments the sweet, citrus flavour of bergamot oil. We only use 100% organic bergamot oil for flavouring. The story is that in 1830 the second Earl Grey was presented with the recipe for this tea during a diplomatic mission to China.

What did you think of our Earl Grey?

With 78% of our panel rating the tea either Excellent or Good, here were some of the lovely comments you gave us on our Earl Grey:

“Wonderful!”

“Earl grey is a winner in my books, again down to the taste but I loved it!

“Even the last cup from the pot is lovely.” “It hits the spot.”

“Rarely drink Earl Grey – but this is amazing! Love the large tea leaves.”

However some of you were less enamoured and felt that the tea was not as intense or flavoursome as you would have liked.

Here are some of the flavour and aroma descriptions that you came up with.  It’s interesting to see that both ‘strong’ and ‘mild’ featured heavily, although ‘delicate’, ‘light’ and ‘citrus’ were definitely the main adjectives used.

Of our taster panel, 59% were already regular Earl Grey drinkers, enjoying Steenbergs but also several other brands.  Over half of our panel drank the Earl Grey without milk and of those, 26% drank their black tea with lemon, with a small handful added sugar or honey to their tea.  If milk was added is was most likely to be cows milk (76%) although a variety of other milks were drunk including soya, almond & goat’s; although of those who drank both, several preferred cow’s milk in their tea but non dairy on cereal.

It was interesting to see that the vast majority of our panel enjoy their tea from a tea pot, with 72% feeling it is a ‘must’ for an enjoyable tea experience.  A tea bag versus loose leaf tea was another interesting debate and really boiled down to time.  54% definitely prefer loose leaf, with 20% preferring bags and 26% using either depending no how much time they had.

58% of our panel also enjoyed tea as their evening drink of choice, although 76% of those chose a decaffeinated herbal tea to wind down.  14% though felt that a glass of wine or a G&T was a much better way to spend an evening and 12% chose a soothing milky drink.

In conclusion, loose leaf tea in a lovely tea pot at the weekend with friends, or whilst reading or watching TV, was agreed to be a very relaxing way to enjoy a cuppa!

1.What is your favourite tea to set you up for the day first thing in the morning?

I’ve always been a big fan of a slice of fresh lemon in warm water but when I want more of a boost I choose a tea instead- a green tea infused with mint or lemon fits the bill perfectly.

2. What is your favourite tea to relax you in the afternoon?

My afternoon and after dinner choice for tea is nearly always peppermint (or a triple mint combo!) I love mint tea and could drink it forever!!

3. What do you like best about Steenbergs teas?

I have only recently started drinking loose teas and I love the choices Steenbergs offers, in both traditional and more unique flavours, as well as the fact they are all organic which is very important to me.

4. Which Steenbergs tea would you most like to try and why?

I love the sound of the Happy Hippy herbal tea! The name makes me smile and the ingredients sounds great- offering a nice change from mint once in a while! I imagine drinking it late morning with a one of my healthy treats to nibble on.

5. Who would you most like to have a cup of tea with and why?

Oooh this is a tough one. For me tea drinking is a mindful process that centres you in the present. I have a tendency to rush around so much in life and tea really helps me slow down and practice mindfulness in those few moments of sipping from a hot mug. Therefore my ideal tea partner would be someone who could help deepen my spiritual awareness, maybe someone like Deepak Chopra.

Welcome back to our tea taster panel, where this time our resident testers have been trying out some interesting teas: Gunpowder and Green Earl Grey.   We’ve had a great response and thought we’d share some of their thoughts and ideas with you. 

Steenbergs organic Gunpowder Tea

A new tea for many of our tasters, who seem to prefer it medium strength with only a couple of you needing to add a little sweetness with honey or a slice of lemon.  This versatile tea was drunk at all times of the day and interestingly, a good few of you chose to drink this after dinner in the evening.  Reminiscent of folk or classical music for many, but with some Chinese opera thrown in!

2. Steenbergs organic Green Earl Grey

Steenbergs organic Green Earl Grey Tea – loose leaf

The majority of our tasters really enjoyed this alternative take on a classic earl grey and enjoyed it for its fresh, floral and aromatic flavours.  No milk, lemon or honey was needed at all but more of you ate it with food – albeit a biscuit or some cake! The strength varied considerably as people brewed it according to their liking, with variations from high to low.  Many of you enjoyed this during the morning and found it a cosy homely drink to be enjoyed with family and friends.  Maybe a more upbeat kind of tea than the gunpowder though, as a few of you instinctively chose Reggae music, along with the classical and folk genres.
