We've long been huge fans of Hodmedod's and all they are doing and standing for, I was reminded about this amazing flour and its story when reading Dan Saladino's book Eating to Extinction and the importance of diversity in all our food.

Hodmedod's organic YQ (yield/quality) wheat population bred by Wakelyns Agrofroestry by Prof Martin Wolfe and the Organic Research Centre. It is an extraordinarily diverse crop from a range of carefully chosen parent plants, leading to fields full of millions of genetically different wheat plants rather than the uniform monocultures we've become used to.

These diverse fields are better able to cope with climatic variability and, over time, are more resistant to disease and offer more consistent yields. They are ideal for low-input, organic, farm systems.

The flour is described by the wonderful Hodmedod's (who are doing such great things in reintroducing lentils and beans back into the UK) as great texture and flavour, suitable for sourdough, pastry and cakes. It's a wholemeal flour stoneground from organically grown wheat and retains all the nutrients and wholesome flavour of wholegrain wheat.
