Old Hamlet Ginger Beer Factory Kit details and description

One Ginger Beer Brewing Kit, created by Old Hamlet Wine and Spice Co. Each ginger beer brewing kit can be used to develop a ginger beer culture (sometimes called a "ginger beer plant") that should grow and grow.

To make each batch, you will also need 1kg of sugar and 2 lemons.  Full instructions inside the box (and below).

Ingredients: Sugar, Ginger (62%), Yeast.

Sugar, Ginger: traded in compliance with Fairtrade Standards.  Total 98%. Visit www.info.fairtrade.net.

Store in a cool dry place.

Instructions:

To make the Ginger Beer Plant:

  1. Into a large jar, put 2 teaspoons of sugar, 2 teaspoons of ginger, the yeast sachet and 425ml of warm water.  Stir well, cover with a cloth and leave for 24 hours.
  2. For 1 week, feed the Ginger Beer Plant daily with 1 teaspoon ginger and 1 teaspoon of sugar.
  3. This is your Ginger Beer Plant.  For a stronger ginger taste increase the amount of ginger in future batches, and vice versa.
  4. After 7 days, strain the Ginger Beer Plant into a bowl or jar through cloth, retaining the sediment.
  5. Scrape the sediment back into the jar.  Next, you should roughly halve it, either giving some to a friend or discarding it.  Restart the Ginger Beer Plant by adding 425ml of warm water and feeding the mixture as before, i.e. from 2 above.

To make the Ginger Beer or Pop:

  1. Put 680g sugar into a large mixing bowl, then dissolve by pouring over 1 litre of boiling water.  Stirring until it has all dissolved. 
  2. Add 3 litres of cold water and mix.  This mixture should now be about body temperature.  Add the juice of the 2 lemons and the liquid from the Ginger Beer Plant, and mix well.
  3. Bottle in the screw top plastic bottles.
  4. Leave for 7 days to mature, then drink.
