Red Kidney Beans vary from pink to maroon red. Red kidney beans have a floury texture and a sweet, creamy flavour. Red kidney beans are core to chilli con carne and frijoles refritos.
Instructions for use:
Soak in plenty of cold water for at least 8 hours or ovenight. Rinse well and cover with water, boil rapidly for 15 minutes, discard this water, then add fresh water and simmer on a low heat until tender (around 1 hour). Drain and season to taste. Ideal for soups, casseroles, chillis and salads. A useful source of fibre and protein. Country of origin: China.
One of the most delicious ways that we've had kidney beans in recent years was a South American inspired dish with fried onion and pancetta with coconut oil, rice and kidney beans added to it and cooked through. Spices and chillies were also added to a plenty. So tasty.
