Steenbergs Organic Juniper Berries have a wonderful ginny flavour that works really well set against rich, gamey meats.  Organic juniper berries are enjoying a renaissance of its ancient popularity as a seasoning for venison(including sausage casserole), pheasant and rabbit. A few Steenbergs organic juniper berries will reduce the wild flavour of these meats and will add the pleasant tartness long associated, such as stuffed goose and beef stews. 


Juniper berries come from a tree, Juniperus communis, that ranges in size from 2-12m high (6-39ft).  Juniper trees are compact, slightly scrappy looking tree, which have greeny-gray, needle-like leaves that stick out at right angles.  Juniper flowers are little, greenish-yellow flowers that are 7-10mm in diameter, after which juniper berries develop taking 2-3 years to mature.  The juniper berries start out as green and hard berries that ripen over 2-3 years to a fleshy, blue-black berries, containing sticky, hard brown seeds.  The berries are generally hand picked, then dried.  On drying, the berries stay soft and blue-black; the aroma and flavour is reminiscent of gin and is piney and resinous.  For further information, please look at Ingredientia and Wikipedia.


Juniper berries have their own distinctive resinous flavour, but are also used in cooking for their ability to reduce the fatty taste of foods, especially of duck, pork and game.  For example, it is delicious in venison casseroles, such as my recipe for venison or in pates and terrines.
