Black beans are small, oval and jet black. They have cream colored flesh, a mild, sweet, earthy taste, and a soft texture. Black beans are a mainstay of Caribbean and South American cooking, e.g. in Frijoles Negros. Black beans are a slightly kidney-shaped bean which is stunningly black. Beans are loaded with antioxidant compounds and black beans are one of the highest.

These organic black  turtle beans are grown around Bororo, in the Mato Grosso, South Brazil. This area has grown beans, maize and sugar for centuries. Sophie's comment:

I think the first time I had black beans was many many years ago when we made Delia's black bean chilli - which from memory is in her Winter Collection. Not being a huge fan of red kidney beans (Axel is, it's just me!) they became a real winner. My favourite is probably still in chilli or as a side for fajitas, combined with onions, Steenbergs organic mexican chilli blend, lime juice and tomatoes. Very tasty. Would work on its own for a purely vegetarian fajita. Looking forward to trying them in brownies.
