  1. In a saucepan, sauté the onion and garlic.
  2. Add the tomatoes and seasonings.
  3. Add the chicken and black olives, mixing together well. Simmer, covered, until cooked in 20 minutes.
  4. The filling should be slightly dry.
  5. Add chicken fillings, cheese and crema to the tortillas, roll over then tuck up bottom end. Serve with Frijoles maneados and Salsa de Chile de Árbol.
