Sweet Potato Gratin

Ingredients

I used a measuring spoon rather than a kitchen-drawer spoon for ingredient quantities

What to do

Preheat oven to 200oC/Gas Mark 6.

In a bowl mix together all ingredients, apart from the cream and parsley. Arrange slices in a deep medium-sized ovenproof dish and sprinkle over any remaining bits of garlic etc from the bowl.

Cover dish with foil and bake for 45 minutes.

Remove foil, add cream to potatoes and roast, uncovered for 25 minutes or until sweet potatoes are soft.

Garnish with a sprinkle of parsley and serve hot, or allow to cool - both delicious!
