Flaming Roast Chicken

This is not for the faint hearted! Serve the skin to those of you who like spicy food, and those who like a more subtle flavour can enjoy the meat alone!




  1. Blend the coriander, cayenne pepper, chile powder, oil, garlic and juice of half the lemon, to form a paste.
  2. Using a spatula, cover the chicken with the paste.
  3. Put the remaining half of the lemon inside the chicken.
  4. Cook at 180oC for about an hour and a half, or until clear juices are seen when a carving fork is used to test the meat.
