Steenbergs Special Spiced ham

 Serves 8-10


Glazing ingredients

What to do?

  1. Put the ham in a large pan, cover with cold water and drop in peppercorns. Bring to a simmer then cover and simmer for 2.5 hours. Drain.
  2. Heat the oven to 180C.
  3. When the ham has cooled, remove the skin of the ham, leaving a decent layer of fat. Score the fat in a diamond pattern with a sharp knife and stud the centre of each diamond with a clove.
  4. Put all glazing ingredients in a pan. Heat the glaze gently to dissolve the sugar then brush the ham liberally with the mix. Sit the ham on a wire rack in a roasting tray with a couple of inches of water in the bottom.
  5. Bake the ham for 30-40 minutes, basting with the glaze until golden.
  6. Leave the ham out of the oven to firm up for 10 minutes before serving. This will give the glaze a chance to set and stick to the ham
