Chicken Masala

Although I have used some Steenbergs Rogan Josh, I have added more ingredients to give it a Masala flavour! Please do not forget to add the amount of spices according to your taste!

Serves 4

Ingredients:

For the marinade:

Method:

  1. Make the marinade by putting the ingredients in a blender, and process until slightly ground and mixed together
  2. Rub the mixture over the chicken and eave in a dish to marinade for about 2 hours
  3. Bring 3 fl oz water and large pinch of salt to boil in a large casserole dish. Add the marinated chicken  and return to the boil. Reduce heat and simmer for 25 minutes, or until dry and the chicken is cooked
  4. Heat the oil in in a large frying pan. Add the chicken and fry for about 10 minutes or until golden brown, stirring occassionaly
  5. Serve with cardamom rice and a warm naan bread
