Steenbergs Lebkuchen

German style spiced biscuits that are eaten on a celebration, but any time of the year would be gratefully received

Makes about 12 biscuits


For the icing


  1. Put the honey, butter, sugar in a small saucepan. Put it over low heat and stir until the butter has melted and everything is well mixed, leave to cool slightly.
  2. Sift the flour, Lebkuchen spice mix and salt together into a mixing bowl, then add the ground almonds.
  3. Add the melted butter mixture and mix until you get a dough.
  4. Knead the dough until smooth, then wrap in cling film and chill in the fridge for a couple of hours.
  5. Preheat the oven to 180˚C/gas mark 4.
  6. Pinch off a small ball of dough and roll in the palm of your hand to get a ball, about the size of golf ball and flatten.
  7. Place on baking parchment on an oven proof tray. Repeat until all the dough has gone.
  8. Bake for 8-10 minutes until the biscuits start to colour on the edges, transfer to a wire rack to cool.
  9. For the icing, mix the water in with the icing sugar slowly and mix to a soft piping consistency. You may need a few more drops of water but not much. Add only a little at a time.
  10. Transfer to a piping bag and ice the biscuits when they are cool.
