Sweet & Smoky Pork Loin

Pork and caramelised molasses produces a hot and smoky aroma with a spicy, sweet flavour. It is very versatile as the rub can be used on any pork which can then be roasted, baked or put on the BBQ.

Ingredients:

This recipe served 3 but the pork fillet was not large

Method:

  1. Place the pork in a dish (if cooking inthe oven) or on some foil if cooking on the BBQ.Rub the sweet and savoury rub over the pork
  2. Add the rest of the ingredients to the dish, or foil - make a parcel with the foil so the juices do not evaporate
  3. Cook in the oven at 180oC for 15-20 minutes, or a little longer on the BBQ, until clear juices are seen when the pork is tested with a fork
  4. Serve with salad, and small roast potatoes that have been cooked in Steenbergs Organic Perfect Salt
