Italian wild thyme raw honey from Seggiano is a cold extracted honey from Michele Oliva and Sons. Wild thyme raw honey is a unique amber coloured honey is made from the nectar of aromatic wild thyme. The wild thyme grows spontaneously in the rocky mountainside crevices and ancient dry stone walls of the Monti Iblei.
Prized by the ancient Greeks for its rare fragrance, flavour and therapeutic properties, it is said to aid bronchial complaints and invigorate the digestion. Intensely aromatic, thyme honey is delicious with creamy cheeses.
For six generations Michele Oliva’s family has bred bees and harvested their honey in the Iblei Mountains of eastern Sicily, from plants such as wild mountain thyme and the indigenous carob trees, as well as the cultivated citrus groves.
The honeys Michele produces from wild and spontaneous plants are often only available in limited quantities.
Michele breeds his own queens from indiginous Sicilian bees. The two sons of the family work together with Michele in the hive management and honey collection, whilst Michele’s elderly father and his wife Francesca help with the extraction and bottling.
The husbandry of his bees doesn’t involve the use of any harmful chemicals to control pests such as the verroa mite.
His honey is extracted by centrifuge, unfiltered and unpasteurised.
