Sel Gris De Guerande (85g) details and description

Steenbergs Sel Gris (also known as grey salt or Celtic salt) comes from traditional salt pans in the Guerande region of Normandy.  Sel gris de Guerande is harvested in a similar way to Steenbergs traditional sea salt from the Algarve, but because the salt panner (in French, the panner is called paludier) rakes the salt with a long wooden rake at the base of the salt pan.  As the salt pan has a clay base, this results in some of the clay becoming intermingled into the salt crystals as they form, giving sel gris its characteristic light grey colouration.  For more on salt harvesting, visit Axel Steenberg's blog, and for more on sel gris try Wikipedia.

Sel gris is harvested using traditional salt making techniques along the coastline of Brittany, where small salt fields dot this swampy coastal region.  The flavours of sel gris come from its terroir, where the vigorous Atlantic sea rushes into the meandering natural estuaries and bays along the coast, slowing down the sea and capturing the salt to mellow, slowly creating beautiful salt crystals in this warm, but not hot climate.  The crystals are irregular chuncks that are blue-grey in colour.  Sel gris de Guerande has a vigorous mineral strength which is given some shape from the fresh briny notes, giving us the flavours of the grand Atlantic.

Sel gris is a great all around sea salt that is perfect with the whole gamut of foods, from fresh fish through to fatty pork.  It adds depth of flavour and enhances your foods.  Add some to freshly cooked green vegetables or over boiled potatoes  or rubbed onto chicken, steak or pork.  For recipe ideas please check out the BBC website.
