Lavender Scone Recipe
Lavender is one of those flavours that can be in sweet or savoury dishes, we’ve come across people who use it in dressings, with duck and also plenty who use it in baking.

Ingredients
For the recipe:
- 225g plain flour
- 1tbsp Steenbergs baking powder
- ½tsp Steenbergs Organic natural sea salt
- 55g butter
- 10g organic granulated natural cane sugar
- 150ml milk
- 1tbsp organic lavender flowers

Method

Pre-heat the oven to 220°C, then lightly flour a baking tray. Sift the flour with the other powder ingredients. Rub the butter with the flour until the mixture resembles breadcrumbs. Stir in the sugar.

Make a deep well in the flour, pour in the liquid and mix to a soft doughy texture with your hands. Sprinkle on the lavender flowers and knead into the dough very lightly until it is just smooth. Roll out the dough into 2½cm balls then squash down. Brush the scones with the beaten egg.

Bake in oven for 7 minutes or until well risen and brown. Leave to cool. Serve with butter or lavender-infused whipped cream.
