Spiced Christmas Clementines Recipe

Ingredients
For the recipe:
- 4-6 depending on size (enough to fill your jar) clementines
- 1/4 cup/85g organic clear runny honey
- 2 organic Fairtrade cinnamon quills
- 1 cup/175g organic granulated cane sugar
- 8 organic Fairtrade whole cloves
- 8 organic green cardamom pods
- 1 500ml/1pt Kiln Jar
- 1 cup water

I have recently learnt that giving such a gift is equally joyful and pleasurable! These spiced clementines make this seasonal fruit a festive favourite, and with the preserving juice, can be enjoyed well into the New Year when we all need a treat!
Method

Break the cardamom pods using a rolling pin, gently, and remove the seeds.

Put the water, honey, sugar, cloves, cardamom seeds and cinnamon quills in a large saucepan. Bring to the boil.

Add the peeled clementines to the water mixture. Allow this to reach boiling before turning down the heat to low, and simmer for 10 minutes. Cover and leave overnight for the spices to infuse.

Sterilise the kiln jar. Wash in soapy water then put in the oven at 275°F/130°C/Gas 1 for about 20 minutes. Cool then add clementines. Bring the syrup back to boiling for 5-10 minutes. When it is cool, add to the clementines and seal the jar.
