Sweet Saffron Loaf Recipe

Ingredients
For the recipe:
- ½tsp saffron threads
- 150ml water
- 1¼tsp yeast
- 350g organic strong white flour
- ½tsp Steenbergs Organic traditional sea salt
- 3tbsp milk powder
- 1 large egg
- 75g unsalted butter, melted
- 125g best quality dried mixed fruit
- 100g no-soak prunes, chopped
- 2tbsp Fairtrade clear runny honey, to glaze
Saffron fruit loaf is a sweet bread that goes well with butter, try it toasted with Wenslydale and a fresh summer jam, unusual but really yummy indeed
Method

Place saffron threads onto foil, then turn foil over and lightly crush threads with rolling pin. Put the crushed organic saffron in a cup, pour on 2 tbsp boiling water and allow to infuse for 5 minutes. Add infusion to measured water.

Put all ingredients (except dried fruits) into bread machine in order as indicated. Set to basic programme with raisin option, if available. Select light crust and start. Add fruit when machine beeps or halfway through kneading cycle.

After baking, remove bread from machine and shake out to cool. Brush top of loaf with honey to glaze.
