Annatto Seeds are dried seeds that have a dark, rusty red colour and are 5 mm long. They have a sweetish, spicy smell and their flavour is mild, earthy and dry.
Though flavourful, annatto is used mainly for colour in fish, rice and vegetable dishes. For example, a traditional sauce for salt cod or ackee in Jamaica. In Mexico, it is used to colour stews, sauces and tacos like Achiote Paste.
To get colour to add to rice or vegetable, simmer 0.5 tsp of annatto in 2 tbsp water for a few minutes, cool then strain liquid into cooking liquid.
