Organic Bai Mu Dan is the most popular of Steenbergs’ white teas. Bai Mu Dan is the best start into the world of white tea if it’s you are starting out.

Bai mu dan comes from Fujian, from the Da Bai tea bush. It differs from classic white teas because it includes the first couple of leaves plus the bud. The leaves are harvested in the spring and withered and are sometimes fired.

Tea brewing: use a warmed tea-pot and put 1 – 2 teaspoons of organic Pai Mu Tan tea leaves into the pot, add freshly boiled water that has slightly cooled and leave to infuse for 6 minutes then add 1 minute per subsequent steep – you can brew these teas at least 3 times.

Our favourite way, though, is to steep the first brew for 10 seconds before throwing away that infusion and then brew again and drink the second brew first.

Tasting notes: straw-coloured brew, refreshing, delicate and very pleasing, sweet flavour. It can become slightly astringent if over infused.
