Chun Mee is a Chinese green tea with twisted leaves, so it’s sometimes called ‘Old Man’s Eyebrows’. The green leaves are regular, dark green that infuse clear green-yellow with a refreshing, grassy taste.
For Chun Mee, the tea is plucked in early spring and then it is pan-fried to halt the oxidation process. After this, the leaves are carefully rolled and dried to give the leaves their thin eyebrow shape. When brewed, the tea is a light green-yellow and has a clean, grassy taste with hints of ripe fruit and a little smokiness from the pan-drying stage.
Tea brewing: Into a warmed teapot, put 1 teaspoon of Chun Mee tea per cup. Bring fresh water to boil, leave to cool to about 75C and pour over Chun Mee tea leaves. Steep for 3 – 4 minutes.
Tasting notes: Clear, powerful, fresh with hints of fruit or dried fruits and some smoky notes.
