Steenbergs Organic Fennel Seeds are small, yellow-green elongated seeds. They have a fresh anise aroma and flavour. Use to flavour tomato sauces, curries or pork.

Fennel combines well with sweet spices like allspice and cardamom and warmer, spicier flavours like ginger, mustard and paprika.

Axel’s Tasting Notes: Amalgamating: hints of anise or liquorice that’s earthy, warm and spicy, with no heat. Fennel seeds benefit from dry roasting which enhances their sweetness.

Food Pairing: Fennel is found in Indian curry dishes, pickles. It is excellent with tomatoes, pork, so sausages or roast pork. Add whole seeds to red lentil dhal or to flavour meatballs, either with vegan mince or pork mince. We drink fennel as a stomach settler, made as a tisane.

Fennel is an annual plant, Foeniculum vulgare dulce. It’s a small herb that grows to 90 cm. It has soft, celery-like stems, with frond-like, green leaves that make it like a fern.

Fennel plants grow bright-yellow, umbrella-shaped blossoms in summer, with the fennel fruit or seeds forming in autumn.

The plant has a mild anise aroma. To harvest, the stems are cut, the seed heads dried in the shade before being threshed to remove the seeds. Fennel seeds are green-yellow, which are about 5 mm long.

Like the plant itself, the seeds have a faint anise aroma. They taste strongly of anise and are warm, spicy, cleansing and refreshing, but with no heat.
