Organic Lavender is floral, piney, woody and herbal. Its delicate purple flowers are particularly popular in French cookery.
Steenbergs sources premium organic Lavender that it packs down in small batches to maximise its floral flavour.
Add Organic Lavender to salad dressings or rub into meats like lamb. Mix lavender with icing sugar for a floral icing that’s great on cupcakes or to flavour ice-cream, shortbread and cakes. Substitute Lavender for Rosemary to give a more floral and less intense flavour.
Axel’s Tasting Notes: Floral; camphor-like, piney and floral, with hints of citrus, mint and rosemary.
More about Lavender
Lavender is a popular garden shrub. There are many varieties. The original is Lavandula vera, the Old English Lavender, which has the finest aroma. The most commonly used for cooking are English lavender (Lavandula angustofolia) and French lavender (Lavandula stoechas).
Lavender grows up to 1 m high. It has long, slender grey-green leaves with long stems that reach upwards, which end in tiny purple petals. The herb is these petals.
Lavender has been used as a stewing herb as well as for its scent. Lavender has a sweet aromatic taste which will flavour anything it is added to.
