Organic Long Jing (Lung Ching) is one of the most popular Chinese green teas. It has a flat leaf, yellow-green in colour. Long Jing gives a pale green brew and has an herbaceous flavour with a slight bitterness.

Product Description

Long Jing is the most popular of the green teas amongst Chinese people. It originally came from the hills around Hangzhou, but this style of flat tea leaves is made all over Chinese these days. The green tea harvest for Long Jing starts in April and goes on a few weeks. These young buds (the so-called ‘Buddha’s eyelid’) are tossed in a wok for around 20 minutes, with slow regular movements.

Tea brewing: Put 1 tsp of Long Jing per cup into the pot. Bring a kettle of freshly drawn water to the boil, leave to cool for a bit (75C) then pour this heated water over the tea leaves. Put the lid on the pot and leave to brew for 4 minutes.

Tasting notes: pale green and shiny, with a smidgeon of bitterness, some acidity and a slight sweetness. Overall, long jing is mild, freshly vegetal vibe with a mild astringency.
