Organic Tarragon is a strongly flavoured herb with a liquorice, anise flavour that is appetising and lingering. It’s a unique and appealing flavour.
Use tarragon to flavour egg dishes like omelette or quiche or classic French sauces like Béarnaise, Hollandaise and Tartare. Tarragon is also good with chicken, veal and game. Its anise-like flavours are great for salad dressings and infused in vinegars. Steenbergs Organic Tarragon is pungent and anise-like so start with a small amount on baked chicken or fish, in tuna or chicken salad, oil and vinegar dressing for salads and marinades.
Axel’s Tasting Notes: Strong; it has a sweet and slightly bitter flavour that is strongly anise, with hints of basil and a lingering, appetising flavour that is loved by many cooks.
More about Tarragon
There are two types of tarragon – French and Russian, Artemisia dracunculus and Artemisia dracunculoides. French tarragon is the one we use, because it is more savoury with a light anise-like flavour. Oddly, both types are said to have originated in Siberia reaching Europe in the Middle Ages.
French Tarragon is a small perennial herb, Artemisia dranunculus, that grows up to 90 cm high. It has smooth, glossy, dark-green, long narrow leaves that grow from opposite sides of wiry stalks.
French Tarragon has a sweet, anise flavour and dries well, keeping most of its aroma. Russian and winter tarragon have much poorer flavours and are not worth the effort.
