Steenbergs Tonka Beans

Tonka Beans have an aromatic flavour, reminiscent of bitter almonds and vanilla. Tonka beans are popular amongst chefs and foodies, particularly for puddings. A little grated tonka goes a long way – completely decadent and slightly naughty.
Tonka beans are native to South America, originating from Guyana on the Orinoco River but usually from Brazil or Venezuela. Tonka Beans are like a flat, wrinkled deep black bean with a shape like an almond.
You use tonka beans like a nutmeg and grate them. They have a flavour and aroma that is full of volatiles and immediately reminiscent of vanilla but with more esters coming through like pear drops or a heady furniture polish. Tonka is a core aroma in the perfume ‘Y’ by Yves St. Laurent.
Axel’s Tasting Notes: Tonka Beans – Aroma: pungent, reminiscent of vanilla with hints of magnolia, Flavour: hints of vanilla, almond extract and sweet spices like cinnamon, cloves and allspice.
Food Pairing: Grate over coffee, into stewed rhubarb, custard, panna cotta, ice cream, Norwegian cream, shortbread.
