Ingredients
For the recipe:
- 180g ground almonds
- 110g caster sugar
- a good pinch sea salt
- 1/2 tsp orange blossom flower water
- 1/2 tsp almond extract
- 3 egg whites (2 for biscuits, 1 for coating)
- 2 tsp honey
- 100g flaked almonds

Method

Line a baking sheet with greaseproof paper and preheat your oven to 190C (170C fan).

Mix together the ground almonds, sugar and sea salt in a bowl, then stir in the almond extract and orange blossom flower water.

In a separate bowl whisk 2 egg whites with the honey into soft peaks.Â

Gently combine egg whites and dry ingredients together until fully combined.

To coat the biscuits, whisk the extra egg white with a fork in a small bowl and place the flaked almonds in another bowl.

Using 2 spoons, make round or oval biscuits shapes, roll briefly in the egg white then in the almonds and place on the baking sheet. Repeat until all the mixture is used.Â

Bake for 12-13 minutes until golden brown.

Cool on a rack and then store in an airtight container.Â
