Luxury Chocolate Brownie Recipe

Everyone loves a gooey chocolate brownie and this is one of the main recipes we use at home.

Ingredients

For the recipe:
  • 55g Fairtrade organic cocoa powder
  • 50ml boiling water
  • 85g unsalted butter, melted
  • 225g organic caster sugar
  • 1 free-range egg
  • ½tsp Steenbergs organic Fairtrade vanilla extract
  • 100g organic plain flour
  • ¼tsp baking powder
  • 100g good quality organic chocolate - 70% cocoa solids - smashed into chunks

Grease a metal baking tray with a pastry (or paint) brush; turn the baking tray upside down after greasing to allow any excess oil to drain away. Heat oven to 180°C.

Sift the cocoa into a large mixing bowl. Mix in the organic Fairtrade cocoa, boiling water and ½ the melted butter and stir well. Add the sugar, the rest of the butter, the egg and the vanilla essence. Sift in the plain flour and baking flour. Beat all the ingredients together with a blender/mixer. Don't overmix and don't worry about the appalling look of the sloppy mixture - this quite normal! Stir in the chocolate chunks.

Pour the mixture into the prepared pan and smooth to an even layer. Bake for 20 - 25 minutes, or until just set in the middle - a wooden skewer inserted into the centre should come out with just a few moist crumbs on it. Don't overbake. Leave to cool completely in the pan before cutting into squares and serving.
