Mexican Salsa De Chile De Arbol Recipe (Chilli Salsa)

Ingredients

For the recipe:
  • 225g green tomatoes, husks removed and rinsed
  • 8 chiles de árbol, wiped clean and left whole
  • 1 clove garlic, roughly chopped
  • 83ml water
  • Steenbergs Organic natural sea salt to taste

A hot salsa made using green tomatoes and plenty of chilli. Great to add to your bbq sauce repertoire. When we first began Steenbergs in 2003, we met a friend of Diana Kennedy who was kind enough to introduce us – obviously via email – and she was kind enough to support us. 

Method

Put an ungreased pan over a low heat and cook the whole tomatoes, turning them from time to time until they are soft and slightly charred, about 15 minutes.

Place the whole chiles to one side of the pan and toast for a few seconds. Discard the stems of the chiles.

Grind the chiles to a textured powder, then add the garlic and cooked tomate verde and blend to a roughly textured sauce.
