Moroccan Sweet Tomato Crostini Recipe

Ingredients

For the recipe:
  • 2.4 kg ripe tomatoes
  • 100g butter
  • 1 medium-sized onion, thinly sliced
  • A pinch saffron, crushed
  • 3 tbsp clear honey
  • 1 tsp organic cinnamon
  • A pinch Steenbergs Organic natural sea salt
  • 1tsp cracked organic black pepper
  • 2 tbsp organic sesame seeds - gently toasted in an un-oiled frying pan

Crostini is similar to bruschetta, sometimes topped with a tomato base then whatever extra you choose. This version has Moroccan spices and sesame seeds to get your tastebuds wanting more.

Serve them as canapes at a party, Christmas or pre dinner nibbles but be sure to make plenty as they are very moreish!

Method

Peel the tomatoes by dunking them quickly in a bowl of boiling water, then cutting off the skin with a knife. Halve the tomatoes and remove the seeds. You could use tinned plum tomatoes, if you want.

Heat the butter in a saucepan with the onion, saffron, natural sea salt and the cracked black pepper. When the onions are translucent, add the tomatoes and a tablespoon of water. Bring to the boil,. Cover and simmer for 45 minutes until the whole mixture is reduced. Make sure that it does not boil dry.

Add the clear honey and cinnamon and cook, stirring occasionally, for 2 minutes. Leave to cool.

Serve on toasted bread, sprinkling with the dry roasted sesame seeds.
