Ingredients

For the recipe:
  • 2 large eggs
  • a pinch fine sea salt
  • 1/2 tsp Steenbergs organic Garam Masala
  • 1/4 tsp Kashmiri chilli powder
  • 1/4 tsp Steenbergs organic ground turmeric
  • 1/4 tsp Steenbergs organic garlic powder
  • 1/4 red onion, very finely diced
  • 1/2 tomato, deseeded and finely diced
  • 1/2 red bell pepper, very finely diced
  • 1/2 green chilli, finely diced
  • a pinch black pepper
  • around 6 (plus more to garnish) sprigs of coriander
  • 1 tbsp vegetable oil

Heat your grill to high.

Crack 2 eggs into a jug or bowl and whisk with a fork. Add a pinch of fine sea salt, all of your spices, the finely diced red onion, diced tomato, your finely diced belle pepper, the green chilli, black pepper and sprigs of chopped coriander. Stir to mix.

Place a large frying pan over a high heat. Add 1 tablespoon of vegetable oil, swirl it around then add the egg mixture, making sure it reaches the edges of the pan. Cook for 20 seconds then place the pan under the grill. Cook until just set (around 2 minutes).

Slide the omelette onto a warm plate and serve with some freshly toasted and buttered bread, divine!
