Pork Chops in a Pot Recipe

Ingredients

For the recipe:
  • 4 pork chops
  • 200ml cider
  • 3 tbsp cider vinegar
  • 1 red pepper, chopped
  • 1 celery stick, chopped
  • 1 onion chopped
  • 1 tin (400g) organic chopped tomatoes
  • 1 tbsp vegetable bouillon stock powder
  • 3 tbsp Steenbregs Organic Cajun Ragin' spice mix
  • Traditional Sea Salt and Organic Black Pepper to taste

Method

In a frying pan, cook the pepper, onion and celery in a little olive oil. Place in a casserole dish with a lid.

Brown the pork chops on a low heat in the frying pan. Add these to the casserole dish.

Mix the cider, cider vinegar, tomatoes and stock powder with the Cajun Ragin and pour over the pork chops.

I cooked this at 160oC/325oF/Gas Mark 3 for about 2 hours until cooked.

Season to taste with Traditional sea salt and Organic black pepper (or alternatively a pinch of Steenbergs organic perfect salt).

Serve with mashed potato.
