Quick Pickled Vegetables Recipe
There's something very satisfying about pickling and this is a great recipe to start you on your way..
Vegan

Ingredients
For the pickling liquor (enough to fill 3 large Steenbergs jars)
- 250ml white wine vinegar
- 125ml apple cider vinegar
- 125ml water
- 2 tbsp granulated sugar
- 1.5-2 tsp salt
For the vegetables
- 1 clove of garlic, sliced
- 1 small onion, peeled & sliced
- 1 tsp per jar Steenbergs organic pickling spice
Ideas for the jars
- Carrot batons with lovage leaves
- Cucumber slices with pink peppercorns
- Cauliflower florets with hot Tasmanian Mountain Peppercorns
A great way to preserve some of the sunshine for later in the year. Experiment with different combinations of vegetables and spices depending on what you have to hand.
This makes quite a strong pickling liquor so do substitute some of the vinegar for water if you prefer it weaker.
Method

First make the pickling liquor by bringing the vinegars, sugar and salt to the boil in a small saucepan (stirring to combine). Keep warm.

Chop the vegetables and layer into each sterilised jar with a little bit of garlic and onion.

Sprinkle in a teaspoon of pickling spices along with any other herbs or spices that you are using.

Finally pour over the hot pickling liquor and leave to cool before putting the lid on and storing in the fridge.

These will be delicious after a day in the fridge and will get stronger the longer they are left.
