Rose Falooda Bites recipe

Ingredients

For the recipe:
  • 300ml milk (or almond milk)
  • 1 tsp agar agar
  • 2 tbsp rose water
  • 1 tbsp rose syrup
  • a few strands saffron
  • a small handful green cardamom pods, crushed
  • a small handful rose petals
  • a small handful chopped nuts

Here’s a simple and light addition to the table:) My grandmother used to make these pink falooda bites for us growing up, light and jelly-like, and incredibly simple to make. Falooda is made with milk, set with China grass or agar agar so it becomes a jelly-like texture within minutes, flavoured with rose water and cardamom and sweetened with rose syrup, which also gives it a lovely pink colour. It still tastes great without rose syrup but the pop of pink is quite alluring! You can garnish it with chopped nuts if you like and some rose petals mix.”

Method

Start by boiling the milk in a small pan.

Mix together the agar agar and the water and stir into the boiling milk.

Add the rose water, rose syrup and saffron into the milk and stir. Pour into a deep dish, taking care not to scald yourself. Let it cool and set for 5 minutes.

Sprinkle with crushed cardamom pods, rose petals and chopped nuts.

Set in the fridge for at least 10 minutes.

Cut into diagonal pieces, add more garnish if desired and enjoy!
