Steenbergs Special Spiced Ham Recipe

Ingredients
For the recipe:
- 2-3 kg Ham or gammon joint
- 10 Steenbergs organic mixed Peppercorns
- 30 Steenbergs organic Cloves
- 2tsp Steenbergs organic ground Cinnamon
- 2tsp Steenbergs organic Allspice
- 6 Steenbergs organic Star anise
- 6 tbsp Organic runny honey
- 2tbsp Organic brown sugar
Spiced ham is a great dish for entertaining with, serve with piccalilly, red cabbage and your favourite potatoes (mashed, baked or boiled or maybe something more adventurous) Serves 8-10
Method

Put the ham in a large pan, cover with cold water and drop in peppercorns. Bring to a simmer then cover and simmer for 2.5 hours. Drain.

Heat the oven to 180C.

When the ham has cooled, remove the skin of the ham, leaving a decent layer of fat. Score the fat in a diamond pattern with a sharp knife and stud the centre of each diamond with a clove.

Put all glazing ingredients in a pan. Heat the glaze gently to dissolve the sugar then brush the ham liberally with the mix. Sit the ham on a wire rack in a roasting tray with a couple of inches of water in the bottom.

Bake the ham for 30-40 minutes, basting with the glaze until golden.

Leave the ham out of the oven to firm up for 10 minutes before serving. This will give the glaze a chance to set and stick to the ham
