Sweet Potato Edamame and Lentil Latkas Recipe

Ingredients

Sweet Potato, lentil and Edamame Latkas
  • 1 sweet potato grated
  • 8 spring onions sliced thinly
  • 1 handful washed rocket leaves
  • 4 tablespoons edamame beans
  • 6 tablespoons cooked organic green or brown lentils
  • 1 small onion sliced thinly
  • 4oz fresh breadcrumbs
  • 3 medium eggs beaten
  • 1 teaspoon organic black pepper
  • 1 teaspoon organic perfect salt blend
  • 2 small teaspoons organic anise powder
  • Sunflower oil for shallow frying
Dip to serve
  • Crème Fraiche
  • ½ teaspoon Organic paprika
  • ½ teaspoon Organic Tellicherry pepper

Latkas are popular in many countries. Different versions are made from sweet to savoury.

My pancake/latka is made using sweet potatoes rather than the traditional white potato, less starch so not as crispy but delicious even so.

In Britain and Ireland they are called pancakes, Swedish rårakor, Polish placki, Czech bramborák and Jewish latke.

Makes 12 latkas

Method

Put all the above into a large bowl except the sunflower oil

Mix till all the ingredients are combined evenly

Heat a little oil in a shallow frying pan on a medium heat

Divide the wet mixture into 12 using a tablespoon

Shape each portion into a round using a cooking ring if you like neatness, or just a spoon

Fry slowly for about five minutes on both sides till golden and cooked evenly

Serve hot with the crème fraiche dip
