Sweet Potato, Spinach, French Bean and Lentil Dahl Recipe

Ingredients

For the recipe:
  • 100g green lentils
  • 450ml vegetable stock
  • 1 small onion, finely chopped
  • 2 tomatoes, chopped
  • 100g french green beans, chopped
  • 1/2 tspn organic turmeric
  • 1 tsp Steenbergs organic chana masala spice blend
  • 2 organic birds eye chillies (dried)
  • 1 large sweet potato, cut into small pieces
  • 2 handfuls leaf spinach, shredded
  • perfect salt and organic black pepper to taste

lentils need spices to give them extra flavour and Steenbergs have so many to choose from.

Recipe for 2

(I used measuring spoons rather than kitchen-drawer spoons for ingredients)

Method

Put all ingredients, except sweet potato, beans and spinach in a pan. Bring to simmer and cook for 10 minutes. Remove birds eye chillies.

Add sweet potato, beans and cook until tender (another 10 minutes). I added a little more water at this stage to stop it drying out.

Stir in spinach and cook for a minute until wilted. Add salt and pepper to taste.

Serve with naan bread.
