Warming Beef Casserole Recipe
Having just purchased a slow cooker I wanted a recipe to give warmth and flavour to cold winter nights.

Ingredients
For the recipe:
- 400g beef, diced
- 3 tbsp organic plain flour
- 1/2 tsp Steenbergs Organic Perfect Salt
- 2 carrots, peeled and chopped
- 1 parsnip, peeled and chopped
- 1/2 butternut squash, peeled and chopped
- 1 onion, chopped finely
- 1/2 tbsp Steenbergs sabzi ghormeh, add more to taste
- 3 cloves of garlic, chopped
- 1 tbs Steenbergs vegetable bouillon in 500ml of water
Having just purchased a slow cooker I wanted a recipe to give warmth and flavour to cold winter nights. This can be cooked in a slow clooker (7 to 8 hours on slow) or in an oven.
Any root vegetables can be used in this recipe and altered according to taste
Method

Season the flour with Steenbergs Organic Perfect Salt. Roll the beef in the seasoned flour

Fry the beef in hot oil until browned in a casserole dish. When brown, transfer to the slow cooker or a plate

Brown the onions in the oil and then return meat to casserole dish.

Add the chopped vegetables, the garlic and the sabzi ghormeh

Add the vegetable stock and bring to the boil

Place in a low oven for about an hour until its cooked

Serve with crunchy jacket potatoes or on creamy mash

If you are cooking this in a slow cooker brown the meat and onions. Transfer to slow cooker, add rest of ingredients and off you go! I cooked this for 7 hours on 'slow' setting - delicious!
