Steenbergs Organic Tarragon is a French tarragon that we source predominantly from Italy.  The most popular of the French herbs - organic tarragon - with its rich, robust flavour combines especially well with the wine and shallot base of many French dishes.  Organic tarragon is full of liquorice-anise aromas and a lingering, lingering and mouth-watering flavour.  Steenbergs organic tarragon is a strong-flavoured herb - start with a small amount on baked chicken or fish, in tuna or chicken salad, oil and vinegar dressing for salads and marinades.

French tarragon is a small perennial herb, Artemisia dranunculus, that grows to some 90cm (35 inches) high.  French tarragon has smooth, glossy, dark-green, long narrow leaves that grow from opposite sides of wiry stalks.  Small yellow-hued buds develop into flowers, but only produces sterile seeds, so must be grown via cuttings or root division.  French tarragon has a liquorice-like aroma and an anise flavour, hints of basil and a lingering, appetising flavour that is loved by many cooks.  French tarragon dries well, keeping most of its aroma, so the dried herb has a good flavour.  Russian and winter tarragon have much poorer flavours and are not worth the effort.  For more on tarragon, visit Wikipedia.  

French tarragon provides that unique liquorice tone to French sauces like bernaise and tartare and are a key component of the french herb mix, fines herbes.  Tarragon vinegar also is a great way of adding some profile to wine vinegars and for imparting the lively taste of tarragon onto salads.  Tarragon has an affinity to dairy and egg dishes, hence it works in bernaise sauce, and works with butter melted over vegetables like courgettes.  Mix some tarragon into mayonnaise for use with cold fish like salmon or sea trout, where it seems to offset the smoothness of the flesh.  French tarragon works well with chicken, turkey, fish and egg dishes.  For further cooking ideas, try the BBC website.
