Cardamom is one of those spices that has so many uses in both sweet and savoury dishes. An essential spice in curries and adds an intriguing flavour to rice. Cardamom is a tropical perennial plant that grows in the shade, often beneath larger shade trees like areca nut. It grows from rhizomes.

Cardamom plants have arching leaves that are 1 – 2 metres long and are shiny on top but dull underneath.

The leaves are large and dramatic, but the stems grow from the base of the plant and spread out along the ground, where small white flowers blossom before the pods grow.

The bright green and plump cardamom pods are hand picked from the base and are largely flavourless in the fresh form.

Fresh green cardamom pods are dried for 3 – 4 days, becoming highly aromatic.

The seeds are inside the papery outer husk and are dark brown in colour, with a strong medicinal eucalypt aroma and are slightly oily.
