Steenbergs Red Long Pepper

Steenbergs Long Pepper is a type of pepper. This red long pepper is from Indonesia (Piper retrofactum).

Steenbergs Long Pepper is come on small family farms in the volcanic soils north of Mount Bokor. Long Pepper grows as spikes of minute fruits on a vine. It is harvested when ripe, fixed by plunging in boiling water, then sun-dried to red brown. Red long pepper is harvested later than normal long pepper.

Axel’s Tasting Notes: Red Long Pepper – Aroma: Lightly peppery – starts with leathery notes, followed by fermented cacao and honey mead (metheglin). Flavour: starts freshly-cut wood with fruity cacao notes, followed by an intense and fiery end.

Food Pairing: Roast lobster, chicken glazed with honey, rabbit, chocolate puddings especially dark mousse, red wine sauces.
