Cinnamon Stars (Zimtsterne) Recipe
A traditional German biscuit often baked and enjoyed in the run up to Christmas.

Ingredients
For the recipe:
- 250g icing sugar, sifted
- 3 egg whites
- a pinch sea salt
- 2 tsp ground cinnamon
- 350g ground almonds

Method

Line a tray with greaseproof paper and preheat the oven to 150C (130C fan)

Place the egg whites into a clean bowl with a pinch of salt and whisk into stiff peaks.

Add in the icing sugar a spoonful at a time until fully combined.

Remove 6-8 tbsp of the mixture, place into a freezer bag and set aside. This will be used to ice the stars.

Mix the cinnamon and ground almonds together and fold carefully into the remaining egg white mixture to form a dough.

Dust your work surface with icing sugar and roll out the dough to about 1/2 cm thick.

Cut out small star shapes using your chosen cutter. To prevent the dough sticking, dip the cutter into a little flour and then shake off before cutting out again.

Keep re-rolling and cutting out the dough until all of it is used up.

Place the stars on your baking sheet.

Snip one very small corner off the freezer bag and then pipe the icing carefully onto the stars.

Place in the oven for 12-15 minutes. Cool before eating.
