Fruity sushi with grilled Halloumi recipe

Ingredients

For the recipe:
  • 4 large oranges peeled and cut into segments
  • zest of 1 orange
  • 4 Organic cardamom pods whole
  • 1 canteloupe melon
  • 1 block Halloumi sliced and cut into small squares about 3cm wide
  • 2 tbs runny honey
  • 2 teaspoons organic ground cinnamon
  • 1 teaspoon organic ground ginger
  • 500g Sushi rice (although you can use arborio rice)
  • 1 packet Clearspring Nori sea vegetable
  • Organic Rose petals
  • Pistachios crushed lightly to sprinkle on finished sushi pieces

Sweet and salty, cinnamon infused sushi bites to tempt your guests at a party The unusual combination of melon, orange and halloumi work really well with the cinnamon and nori strips

Method

Slice and prepare all fruit

Add the honey, cinnamon, cardamom, ground ginger and star anise

Cover the fruit and let macerate for at least 4 hours to let the spices work their magic

prepare the Sushi rice according to the packet: rinse several times till the water runs clear before starting the cooking process.

put into a pan and add 660ml cold water and the zest of one orange and cover with a lid

cook for 10 minutes using a timer

Remove from the heat and keep the pan lid on

Ignore the rice for 30 minutes, don't be tempted to lift the lid

Dry fry your halloumi in a non stick shallow pan while the rice is cooling

Spread the rice evenly onto a sheet of greasproof paper or use a shushi block maker if you have one

Cut the rice into small even bite sized pieces

Arrange the fruit and halloumi on top of the rice in single overlapping layers

wrap each piece in a nori seaweed strip and decorate with rose petals and pistachios
