Italian fresh tomato Pasta Sauce Recipe
A wonderful tomato pasta sauce that can be frozen so it's always to hand.

Ingredients
For the recipe:
- 450g ripe tomatoes (or 1 tin)
- 1 medium sized onion, thinly sliced
- 30g butter or oil
- 1 dessertspoon organic plain flour
- 2 cloves garlic, smashed and chopped finely
- 150ml vegetable stock - organic vegetable bouillon can be used instead
- 1tsp of organic Italian herbs or to taste
- Steenbergs Organic fleur de sel
- FAIRTRADE organic black pepper
- 15g butter, to finish
- Steenbergs organic chilli powder if you want to hot it up
This recipe can easily be doubled for larger dishes or frozen for a quick sauce when you “just have no spare time”.

Method

Start by putting a cross on the tomatoes with a sharp knife.

put in a bowl and cover with boiling water

leave for five minutes then put tomatoes in cold water

the skins should now peel off easily using a sharp knife

cut tomato in half and discard the seeds

chop into small chunks

Melt butter in pan and soften the sliced onion, then add the crushed garlic, the Italian herb seasoning and the stock. Bring to the boil, season with Steenbergs fleur de sel and black pepper and perhaps a pinch of salt. (alternatively a pinch of Steenbergs organic perfect salt)

Add the tomatoes and their juice, cover and simmer for at least 20 minutes or until pulpy.

Rub the sauce through a strainer to remove the pulp, then return to the rinsed out pan. Boil again until really thick, stirring occasionally then stir in butter.
