Rustic French Bread Recipe

Ingredients

For the recipe:
  • 1½tsp yeast
  • 300g organic strong white flour
  • 150g organic spelt flour
  • 50g organic rye flour
  • 1½tsp Steenbergs Organic natural sea salt
  • 1tbsp Fairtrade organic runny honey
  • 25g organic butter
  • 350ml organic milk

Method

Put the ingredients into the bread machine. Set to the dough programme and start. Grease a large baking tray (we actually use a stainless steel frying pan because it's the right shape!). Pre-heat oven to 220°C (fan assisted oven 200°C).

Once the dough is ready, turn it out onto a floured surface and punch it down to deflate it. Shape dough into a ball and place on the baking sheet. Cover loosely with lightly oiled cling-film and leave to rise for about 30 minutes until doubled in size.

Sprinkle top of dough with flour, then using a sharp knife cut 5 diagonal small slits across the top then a further 5 the other way to create a diamond pattern.

Bake for 15 minutes then reduce temperature to 190°C (fan oven 170°C) and bake for a further 15 - 20 minutes. If it starts browning too quickly cover loosely with foil on top. Transfer to wire rack to cool. Eat immediately.
