Speedy Veggie Fried Rice & Speedy Tomato Salsa recipe

A quick and easy dish that’s full of flavour and great for using up leftover rice.

Speedy Veggie Fried Rice & Speedy Tomato Salsa recipe

Ingredients

For the rice
  • 1 tbsp olive oil
  • 350g cooked day-old rice OR cooked wild rice and basmati rice combo, cooled
  • 1/2 tin black beans, drained and washed
  • 2 bell peppers, cubed
  • 2-3 spring onions, sliced
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp Niki's Turkish blend
  • to garnish dried parsley
  • to garnish a good pinch of smoked sea salt
  • 1 fried egg
  • to garnish chilli sauce, optional
For the tomato salsa
  • a small handful of cherry tomatoes, chopped into quarters
  • bell pepper, cubed
  • a good plug of olive oil and apple cider vinegar
  • a sprinkle of dried parsley
  • a good pinch of sae salt & black pepper

Method

First make the salsa.

Simply mix all these ingredients together and pop in the fridge for at least 30 minutes before cooking your spicy fried veggie rice!

In a large frying pan, add your oil and day-old rice, over a medium low heat.

Mix and add your spices to coat the rice. Add your black beans at this stage along with the rest of your veggies. Taste for seasoning.

Just before serving, fry your egg until the base is crispy but the yolk still runny. Garnish with dried parsley and salt and top with chilli sauce, if using. Enjoy!
