Walnut and Sour Cherry Banana Bread Recipe
This delicious banana bread recipe with a sour cherry and walnut twist is gluten free, vegan with no refined sugar. Yum.

Ingredients
For the recipe:
- 300g Gluten Free Oats
- 100g coconut sugar
- 2 tsp Baking Powder
- 4 bananas (the blacker the better)
- 100ml maple syrup
- 120ml Almond Milk
- 70ml Coconut Oil (melted)
- 1 tsp Steenbergs organic Fairtrade Vanilla Extract
- 75g Toasted walnuts (chopped)
- 75g sour cherries chopped
This wonderful sour cherry and walnut banana bread recipe comes from the trained chef – Gourmet Glow. Susie (aka Gourmet Glow) says of the recipe: this tastes better than regular banana bread. Oaty, nutty and moist with fruit with a little tang of sour cherry, I couldn’t think of a better partner to a nice cup of Redbush Tea.
Method

Preheat Oven 170C. Grease a loaf tin with coconut oil and set aside.

Blitz the oats with the baking powder and a pinch of salt and set aside.

Blitz the bananas, maple syrup, almond milk, coconut oil and vanilla until combined. Add this to the oat flour mix and combine thoroughly.

Mix in the chopped nuts and fruit (try experimenting with your own combinations).

Bake for 65 minutes or until a skewer comes out clean.

Leave to cool in the tin for 10 minutes, turn out and enjoy when cool. You can enjoy this hot but be warned, it may crumble when you cut it.
